Montbard, home of the famous naturalist Buffon, is set on a hill dominated by a vast park (Parc Buffon) surrounding the remains of the castle of the Dukes of Burgundy.
Leaving Montbard, drive up through the Bois Thureau to the hamlet of La Mairie. From here, turn right onto a small forestry road through the Grand Jailly forest to Savoisy, where the church, destroyed in 1752 and rebuilt in 1779, is well worth a look.
At Balot, there is a botanical trail in the middle of the forest where you can discover more than 80 species of forest herbaceous plants.
Then there's Laignes, named after the river that rises in the centre of the village after more than 20 km of underground travel. The listed 12th-century church and the café des chiens, with its carved wooden facade, are well worth a visit.
The return journey takes you along small, gently undulating forest roads to Saint-Rémy. From here, take a short 2 km diversions to the right to go to the village of Buffon and visit the Forge de Buffon, where you will discover one of the oldest trades in the world, ironmaking, with its two waterwheels, a hammer and the monumental wind tunnel that have been rebuilt to bring the forge to life (free visits from 10am to 12 noon and 2-6pm).
From Buffon, it's a 7km flat drive back to Montbard.

Moloy is a charming village in the heart of the very green Ignon valley, which you will leave to reach Léry. A climb up a small wooded road will take you to Echalot, where the modern castle overlooks the pond that gives birth to the river Brevon. A few hills further on, you'll descend to Etalante.
Visit the spectacular cirque of the sources de la Coquille (a listed natural site), remarkable for its picturesque appearance, picnic area and exceptional flora with mountain species of flowers. The two wash-houses at La Douix and La Chaume are well worth a visit.
The magnificent Coquille valley leads to Aignay-le-Duc. Its church, a miniature of a 13th-century Gothic church, and its washhouse will catch your eye.
A pleasant climb via Moitron will take you to Larçon, with its golf course and farmhouse restaurant set in the unspoilt countryside of the Châtillonnais region.
Once you've passed the summit of the côte des Suchots, the highest point on the route, all that's left to do is descend into the national forest as far as Moloy.
Grancey-le-Château, on a rocky spur, is a medieval village squeezed around the castle, a listed historic monument that dominates the plain. This 18th-century castle is nicknamed "Burgundy's little Versailles" by the locals.
The ramparts, which are illuminated all year round, the lava-roofed houses and the wash-house are the village's other sights. Follow a road lined with magnificent lime trees as you leave the village in the direction of Beneuvre.
On your right, a small balcony road overlooking the Ource valley leads to Chaugey. You will enter the Haute-Marne and a fairly steep climb will take you to Colmier-le-Bas and then Colmier-le-Haut.
Your return to the Côte-d'Or will take you past Recey-sur-Ource, an old village where the church, enlarged over the centuries, has both Romanesque and Gothic features. A hilly forest road takes you back up to the plateau at Saint-Broing-les-Moines before descending to Minot.
The return journey takes you up and down between the villages to Grancey-le-Château.
Effervescent and sparkling, the Route du Crémant will guide you through the intoxicating world of the Châtillonnais region: springs of the Douix, tasting cellar, Benedictine abbey, ancient villages where Celtic history has left many traces that can be seen at the Musée du pays Châtillonnais - Trésor de Vix. A pleasant programme of walks and visits that will leave you with little time to relax!
With your bike on and your water bottle filled, enter the largest forest in Burgundy. This generous forest is full of surprises: deer, roe deer and wild boar have taken up residence here, as have other rare and protected species including the Sabot de Vénus...
Take to the high plateaux of the Châtillonnais region to discover the remains of ancient châteaux, witnesses to our region's tumultuous past. And don't forget to cool off between two plateaus, as the Seine is not far away...
